What is Prep time target?

A prep time target is the number of minutes a kitchen aims to take from receiving an order to having it ready. Tickets are judged on time or late against it.

Bhookly sets a separate target for dine-in, takeaway and delivery, and each ticket's timer runs green, amber, red, then flashing against it. The clock starts when the order is fired, not when the tab was opened. A performance strip shows the last 24 hours: average prep time, percentage on time and tickets done.
