What is Expo (expeditor)?

The expo, short for expeditor, is the person at the pass who gathers dishes from each station, checks the order is complete and sends it to the table or the rider.

Bhookly's expo view regroups every ticket by station and shows progress such as "2/3 ready", so the expo sees which station is holding up a table. A completed lane lists today's finished tickets, which answers "did table 6 go out?" without leaving the kitchen.
