What is Food cost percentage?

Food cost percentage is what the ingredients cost as a share of what the food sells for: the plate cost of one dish divided by its price, or total cost of goods divided by total sales. The remainder is the gross margin.

Bhookly shows every menu item with its price, plate cost, profit and margin, and flags the items that need attention. A dish can be costed four ways: a recipe, a fixed cost, a percentage of price, or none, so margin reporting works before every recipe is written. The profit panel carries a badge showing how much of the menu has a cost set.
