Can a restaurant POS really work without internet?

An offline-ready one can — it runs from data stored on the device, keeps billing and sending kitchen orders, and syncs when the connection returns. A cloud-dependent POS cannot function without a live connection.

How do I test a vendor's offline claim before buying?

Make them prove it in the demo. Ask them to disconnect the internet mid-sale and complete a full transaction — ring it up, apply tax, print the bill. Then send an order to the kitchen while still offline, reconnect, and confirm everything synced with correct totals. If a vendor hedges or can only demo it online, that's a cloud-dependent system in cloud-ready language.

Will I lose data if the power goes out during a sale?

With an offline-ready POS, no — transactions are stored on the device and uploaded when connectivity returns.

Does absolutely everything work offline?

No, and any vendor claiming total parity is overselling. Core billing, receipts and KOT/KDS are the offline essentials. Certain steps — card authorisation, or real-time fiscal validation — can still need a live connection on any system.
